Raw infusion removes stat scaling but increases overall damage. It's a good infusion for people who start their characters by leveling up HP/Stamina instead of STR/DEX/INT/FAI. Depends on your stats, really. But since it is a DEX weapon I would recommend sharp infusion and leveling up DEX. It depends on your stats. If you have high Dex you should infuse it with a sharp gem, if you have high strength maybe you should be looking to use a different weapon as it wouldn't scale very well with strength.
If you're using a buff, the Uchi, but be prepared to look like every other "Faith" build out there. PGS is a good choice as well but it's a better backup weapon. Your stats don't seem high enough to get the most out of a Halberd. Consider a Scythe. It's moveset is excellent, longish reach, high base dmg/scaling for Dex builds, has bleed AND can be resin buffed, and has an excellent, super adaptable battle art.A standard (+15 for example) upgrade path uchigatana will become exceptional with high dex, elementals don't scale, so lightning will be unaffected. You wont need Quelaags soul for lightning, it´s for the Furysword. Bring a +10 Uchi to giant blacksmith. You make it lightning with a titanite chunk.

When you two hand weapons, you get 1.5 times effect in your strength stat. So if you have 20 strength, two handing a weapon gives you a effective 30 strength. The uchigatana is still a perfectly good weapon though, and you'll probably not find anything strictly 'better'. No reason to switch weapons, unless you're just getting bored of katanas in general. I was going to switch to a scythe but I still like my katana build so I'll just keep chipping away at it.Havel turtles have to attack eventually and with low vit due to all that str+end, point-blank dark bead can one or two shot most havel shield users, just takes patience. They will prolly lower their shield at the wrong time if you encourage them to bs-fish through over-aggressive play, then unlock dark bead punish, gg.It is easy to get bleed resist, and bleed is the main reason to use uchigatana. Without landing bleed, the damage in general is pitiful. Having a lot of low damage hits is fine, if you can get them in.
